Classically trained chef Nicholas Hertel draws his culinary inspiration from his prior work in kitchens around the world, most recently with renowned chef and restaurateur Charlie Trotter.

Chef Hertel always uses the freshest local ingredients in all his Southwestern-inspired dishes. Whether you choose the Whole Arizona Grilled Quail (glazed with Arizona cider and served with a Sonoran grits cake), the Caramelized Day Boat Scallops (accompanied by fresh bacon, hatch chile puree, Mexican papaya salsa and coriander cream), the Smoked & Spiced Bison Bistro Tender (served with sweet corn pudding, red chili emulsion and bourbon jus) or another delectable selection from the menu, Chef Hertel’s creation are a true reflection of the taste of the Southwest.
