Our longtime Executive Chef, Esteban Colon, takes pride in cooking with only the finest and freshest ingredients. His guacamole, salsas and unique Mexican sauces are made from scratch daily.
Adding to an already adventurous lineup, Chef Colon is always on the lookout for new and exciting dishes like the Pollo en Mole Poblano (an oven-roasted chicken breast served with roasted plantains, Spanish rice and his own signature mole sauce), or the Chimayo Chile Filete de Puerco (roasted pork tenderloin served with green chili “mac and cheese” and a bourbon-ancho chili sauce).
